Brownies
What you need
- 200g chocolate
- 150g butter
- 1 cup sugar
- 3 eggs
- ¾ cup flour
Salt, pepper, water and oil don’t count. Mom always had those.
What you do
Melt chocolate and butter together, stir in sugar, then eggs, then fold in flour. Bake twenty-five minutes only — the middle should still wobble.
How it feels to make
Taking them out while the middle still moves is terrifying and correct.

Underbake them. A clean skewer means you've made chocolate cake by mistake.
