Pineapple Upside-Down Cake
What you need
- 1 tin of pineapple
- 1½ cups flour
- 1 cup sugar
- 3 eggs
- 150g butter
Salt, pepper, water and oil don’t count. Mom always had those.
What you do
Melt butter and some sugar in the bottom of the tin, lay pineapple rings on it, pour plain batter over and bake forty-five minutes. Turn out while warm.
How it feels to make
Turning it out and finding the rings still in place is the most satisfying moment in baking.

Turn it out while it's warm. Let it go cold in the tin and it welds itself in.
