Chocolate Mousse
What you need
- 200g chocolate
- 1 cup cream
- 3 eggs
Salt, pepper, water and oil don’t count. Mom always had those.
What you do
Melt the chocolate and cool slightly. Beat in the yolks, whip the cream and whites separately, then fold everything together gently. Chill four hours.
How it feels to make
Folding it so you don't knock the air out takes a lighter hand than you think you have.

Fold, don't stir. Big slow movements, and stop the second it's combined.
