Sauteed Courgettes
What you need
- 3 courgettes
- 2 cloves of garlic
- olive oil
- mint
Salt, pepper, water and oil don’t count. Mom always had those.
What you do
Slice into rounds and fry in hot oil in a single layer without stirring until browned underneath, then turn. Garlic and mint at the end.
How it feels to make
Leaving them undisturbed is the only way they brown instead of stewing.

One layer in the pan and leave them alone. Crowd them and it's courgette soup.
