Baked Eggs in Tomato
What you need
- 3 eggs
- 1 tin of tomatoes
- 1 onion
- cumin
Salt, pepper, water and oil don’t count. Mom always had those.
What you do
Soften the chopped onion, add tomatoes and cumin, simmer ten minutes. Make three wells, crack an egg into each, cover and cook until the whites set.
How it feels to make
Cracking the eggs into the red sauce and watching them sit there is the best-looking pan in this whole tin.

Take it off when the yolks still wobble. They keep cooking in the hot sauce.
