Egg and Spinach Scramble
What you need
- 2 eggs
- a handful of spinach
- butter
- grated cheese
Salt, pepper, water and oil don’t count. Mom always had those.
What you do
Wilt the spinach in butter, pour in the beaten eggs and stir slowly over low heat. Add cheese right at the end and take it off.
How it feels to make
The spinach turns dark and slick before the eggs go in, and then everything happens quickly.

Squeeze the water out of the spinach after it wilts or the eggs go watery.
