Chicken Schnitzel
What you need
- 2 chicken breasts
- 1 egg
- breadcrumbs
- flour
Salt, pepper, water and oil don’t count. Mom always had those.
What you do
Flatten the chicken between two sheets of paper. Coat in flour, then beaten egg, then breadcrumbs, and shallow fry three minutes a side.
How it feels to make
Bashing the chicken flat is loud and enormously satisfying and gets rid of a bad mood.
Mom wrote on the back
Flour, egg, crumbs, in that order. Miss the flour and the coating slides off.
