Egg Drop Soup
What you need
- chicken stock
- 1 egg
- 1 spring onion
Salt, pepper, water and oil don’t count. Mom always had those.
What you do
Bring the stock to a gentle simmer. Beat the egg, then pour it in a thin stream while stirring the pot in one direction. Scatter spring onion over.
How it feels to make
The egg turns into ribbons the second it touches the broth and you'll want to do it again.

Thin stream, keep stirring. Dump it in and you've got a boiled egg in soup.
