Lemon Loaf

What you need

• 1½ cups flour
• 1 cup sugar
• 3 eggs
• 150g butter
• 2 lemons

Salt, pepper, water and oil don’t count. Mom always had those.

What you do

Cream butter, sugar and lemon zest, add eggs, fold in flour and baking powder. Bake fifty minutes, then spoon lemon juice mixed with sugar over the hot loaf.

How it feels to make

Rubbing the zest into the sugar with your fingers first makes the whole kitchen smell like lemon.
